Cook Time: 1 hour
Total Time: 1 hour 15 minutes
Servings: 6

Ingredients

  • 1½ lbs ground beef (80/20 blend works best)
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • ½ cup milk
  • 2 large eggs
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme (optional)

For the Glaze:

  • ¼ cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon Dijon or yellow mustard

Directions

  1. Preheat Oven:
Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
  2. Make the Mixture:
In a large bowl, combine ground beef, breadcrumbs, onion, milk, eggs, ketchup, Worcestershire sauce, salt, pepper, garlic powder, and thyme.
Mix gently until just combined (avoid overmixing).
  3. Shape the Meatloaf:
Transfer the mixture to your loaf pan and shape it evenly.
  4. Add the Glaze:
In a small bowl, whisk together ketchup, brown sugar, and mustard. Spread half of the glaze on top of the meatloaf before baking.
  5. Bake:
Bake for 45 minutes. Remove from oven, spread the remaining glaze on top, and return to bake for another 15 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Rest and Serve:
Let the meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes or green beans for a classic comfort meal.
