🧅 Classic French Onion Soup

🛒 Ingredients

  • 4 large yellow onions, thinly sliced
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp sugar (helps with caramelization)
  • 2 cloves garlic, minced
  • ½ cup dry white wine (optional but adds flavor)
  • 6 cups beef broth (or half beef, half chicken)
  • 1 tbsp Worcestershire sauce
  • 1 bay leaf
  • ½ tsp dried thyme (or 2 sprigs fresh)
  • Salt and pepper to taste

For Topping:

  • 1 baguette, sliced
  • 2 cups shredded Gruyère or Swiss cheese

👩‍🍳 Directions

  1. Caramelize the Onions
    In a large pot or Dutch oven, melt butter with olive oil over medium heat. Add onions and sugar.
    Cook slowly, stirring often, for 30–40 minutes until golden brown and caramelized. Don’t rush this step — it’s the key to deep flavor.
  2. Deglaze the Pan
    Add minced garlic and cook for 1 minute. Pour in the wine and scrape up any brown bits from the bottom. Simmer until the wine is mostly evaporated.
  3. Add Broth & Simmer
    Add beef broth, Worcestershire sauce, bay leaf, and thyme. Bring to a simmer and cook for 20–25 minutes
